  • Preheat oven to 400 degrees F and line cookie sheet with parchment paper.
  • In a small bowl, combine cream cheese, cheddar cheese and diced jalapeño peppers. Set aside.
  • Take each chicken breast and butterfly them, separating into 6 breast halves. Pound each out until they are about 1/4 inch thickness.
  • Divide mixture into 6 portions and spoon into each chicken breast. Roll chicken up and wrap with 1-2 slices of bacon. Use toothpicks as needed.
  • Coat each piece of chicken with the cheese crumb mix and place on sheet.
  • Bake for 30-40 minutes, turning halfway through cooking time.


Unless you are making your own bread crumbs for the coating, I would avoid salting the chicken. The packet is salty enough on its own.
