  • Bake potatoes until done. Let cool, peel and cut potatoes into bite size pieces.
  • In a large pot on medium heat, melt butter, add flour and stir until blended. Increase heat to medium high. Slowly add milk until mixture is almost to a boil.
  • Add potatoes, green onions, and bacon. Stir in cheese, sour cream, and salt and pepper to taste. Heat until cheese is melted; serve.

Notes

This soup freezes well. I think it tastes better the next day. I’ve made this soup using cornstarch because my daughter is gluten intolerant. Either way the soup is really very good. My family calls it comfort food. Hope you try it out. If you do, I’m sure you will like it.
