  • Preheat oven to 350 degrees F. On med high, heat vegetable oil in a large pan. Add whole chicken and brown all sides of chicken. Remove chicken from pan and save pan drippings. In a large oven proof pan (large enough to hold the chicken) put the chicken in the oven proof bag then in the pan.
  • To the saved pan drippings on med heat, add the packet of French onion soup mix and the flour stirring with a whisk to mix all together. Stir till the onion soup mix starts to get golden brown. [Don’t let it burn.] Then add the water and the apricot preserves. Mix till it is smooth. Stir in sour cream and mix well making sure all is mixed well. Pour the sauce over the chicken and seal the bag. Make three or four slits in the bag to let the steam out.
  • Place the pan of chicken in the oven and cook for 2 hours.


The best part of this recipe is you don't even have to look at the chicken as it's cooking. Just let it cook for 2 hours. After 2 hours, take the pan of chicken out of the oven, and place the pan on a flat surface. You can use the same pan to serve the chicken, but I like to use a nice looking platter to serve the chicken to my guests. If your going to use a different platter to serve the chicken, carefully lift the bag ot of the pan [WATCH OUT ITS HOT.] Place the chicken in the bag into the other pan then cut along the length of the bag and just roll the chicken and the sauce out of the bag into the other platter. Do the same if your useing the same pan that you cooked the chicken in. Try this with the chicken. Make rice to go with the chicken add 2 Tbsp. of fresh rosemary to the rice before you put the lid on stir to mix and put the lid on. When rice is done your guests can put the sauce from the chicken on the rice. It's sooooooo good.
