  • Coat skillet with olive oil (2 good swirls around the pan). Heat oil but not burning. Add garlic & let it fuse together for about 1-2 minutes. Add onion & saute.
  • While that is sauteing rub chicken with the seasonings & dressing. Then add to the onion & garlic in the pan, let saute until outside of chicken is golden brown.
  • Then add the potatoes & cook until chicken & potatoes are done.


I made rolls to go with this dish as well as sauteed some fresh green beans in some olive oil with 1/2 onion & salt & pepper for taste. It is very easy & even better the next day, so you could make up one day & eat it the next.
