  • Pulse the imitation krab meat into shreds in a food processor. Dice the scallion greens (reserve the bulbs). Pulse the water chestnuts into chunks in a food processor.
  • Combine: shredded krab meat, softened cream cheese, diced scallions, chopped red pepper, diced water chestnuts, minced garlic, parmesan cheese, hot sauce, Miracle Whip and lemon juice in a large bowl. Cream all ingredients together with at large spoon. Form into a large ball.
  • Arrange the lettuce leaves on a plate and place the ball in the center of the plate. Fray the ends of the scallion bulbs to use as garnish. Cover with plastic wrap and refrigerate overnight to let it firm up. Serve with crackers.


This is the only recipe that I have actually created from scratch. Every time I take it into work, at least five people ask me for the recipe! My original recipe did not have red pepper or water chestnuts which I added for color and crunch.
