  • Preheat oven to 350 degrees. Brown ground beef in large skillet. Once browned, add taco seasoning, Velveeta (cubed), 1/2 cup salsa, 1/2 cup water and refried beans. Stir until cheese is melted and well combined.
  • In a 13x9 inch baking dish, spread 1/2 cup salsa in bottom. Divide ground beef mixture between the 8 tortillas, placing the mixture in middle of tortilla, folding over, and placing (seam side down) into baking dish. Top with remaining 1/2 cup salsa and shredded cheese.
  • Bake in oven 20 minutes or until heated through.

Special Equipment Needed


Tasty spin on enchiladas, with more cheese and refried beans. Serve with Spanish rice and a small salad for a complete meal.
