  • Cook squash in salted water for 5 minutes and drain. Add the carrots and onion to the drained squash.
  • In a large mixing bowl add the cheese, sour cream, soup and mix. Melt the stick of butter in a large casserole dish. While butter is melting, add squash, carrots, and onions to other ingredients and mix.
  • Pour stuffing mix into bowl, add the melted butter from the casserole dish and mix well. Put half of the vegetable mix in the casserole and cover with half of the butter and stuffing mix. Put the remaining vegetable mix on top of ingredients in casserole and top with remaining stuffing mix.
  • Cook at 350 degrees F for 45 minutes and serve.

Special Equipment Needed


If there are any leftovers, this makes a dynamite omelet for breakfast. I sprinkle the top with green onions, crumbled bacon and cheddar cheese.
