  • Preheat oven to 350. Coat a 9x13 baking pan with cooking spray. Cook ground beef in a large non-stick skillet over medium-high heat until no longer pink. Carefully drain off any grease. Add spaghetti sauce to meat, reduce heat to low, cover, and cook for 15 minutes.
  • Meanwhile, cook lasagna noodles according to package direction, leaving out any salt. Carefully drain noodles. Rinse with cold water and drain again, set aside. Crack egg into a large bowl and beat until frothy. Stir in cottage cheese, parmesan cheese, and black pepper.
  • Lay lasagna noodles flat on a clean counter. Spread each lasagna noodle with about 1/4 cup of the cottage cheese mixture. Then spread about 1/4 cup of the meat mixture on top of that. Loosely roll each lasagna noodle up from one end. Place each rolled up noodle seam-side down in prepared pan. Place lasagna rollers side by side in the pan. If any filling leaks out while you're rolling up the noodles, spoon it into the pan around the lasagna rollers. Spoon remaining meat sauce over the rollers. Sprinkle each roller with mozzarella cheese.
  • Bake uncovered for 25-30 minutes, or until cheese is melted and the sauce is bubbly.
