  • Preheat oven to 375 F. Mix together spinach and corn and microwave on high for 2-3 minutes. Add 1 1/4 cups cheese and seasoning, and set aside.
  • On a cutting board, take out 4 sheets of phyllo dough at a time (cover unused dough to prevent from drying out). Lightly spray each sheet in the stack with non stick spray. Starting on the long side of rectangle, cut strips about 2-3 inches wide (4-5 strips per rectangle). Stack each strip on top of each other and make 3 additional cuts to yield 4 square stacks.
  • Separate and layer dough squares on bottom of 9" round cake pan or pie dish, covering bottom and extending up sides. Spread spinach mixture on top and repeat layers until spinach mixture is gone (should make 3 more layers). Final layer will be dough, sprinkled with remaining cheese.
  • Bake 18-20 minutes, or until golden. Remove from oven and allow to stand a minute or two before serving.
