  • Begin to boil the 1 cup of water to prepare rice. Once at a boil add rice and cook on low until water is absorbed. Meanwhile, brown ground beef in skillet. Add taco seasonings and water as directed. Simmer on low until MOST of liquid is absorbed. When rice is done, add to the taco mixture and mix together well. Mixture will get thick as it stands.
  • FOR TACO PIE--In an ungreased 8" pie plate, place a tortilla shell on the bottom (may need to me trimmed). Add a ladle full of meat mixture on to tortilla and spread out evenly. Add shredded cheddar cheese is desired then another tortilla and more meat...and cheese until your at the top. The top should be topped off with a tortilla and some cheese or salsa or sour cream.
  • FOR TACO DIP--prepare as above, instead of shredded cheddar add 1/8 cup Velveeta Cheese and place meat/rice and cheese mixture in a large bowl and serve with Frito scoops or other tortilla chips- GREAT FOR SPORTS PARTIES!
