  • Heat vegetable oil in large skillet. Saute onion, bell pepper and carrots until tender.
  • Add garlic, saute 1 more minute.
  • Add turkey and cooked rice, heating through. Add soy sauce and orange juice, mix well. Serve immediately.

Notes

Fabulous use of leftover Thanksgiving turkey, healthy too! A food processor makes short work of the chopping, except the bell pepper.
