  • Pound chicken breasts. Dip in beaten egg, then in bread crumbs. Heat oil in pan. Place chicken cutlets in pan and brown on both sides. Remove to platter.
  • In the meantime, melt butter in sauce pan; add flour to make a roux. Add chicken broth - bring to boil. Stir till thickened. Add lemon juice to taste.
  • Place some lemon sauce in baking dish. Place chicken in dish and cover with remaining sauce. Bake, uncovered in 350 degree oven for 20 minutes. Place lemon slices on each chicken cutlet, sprinkle with parsley and serve.
