  • Combine 1 cup sugar and flour and a little water. Mix till smooth. Beat egg yolks and add to the sugar/flour mixture. Stir well,add remainging water.
  • Cook over boiling water (double boiler) stirring contantly until thick. Cover and cook 10 minutes. Remove from heat and add lemon juice and rind, salt and butter. Mix well and pour into a prepared piecrust.
  • For the meringue beat egg whites to a soft peak. Add sugar gradually beating constantly until firm peaks. Swirl on pie and put in a 325 degree oven for 15 minutes or until brown.

Special Equipment Needed


Tere are different sizes of lemons. I use a fairly large lemon. It depends whether you like tart lemon pies, ajust accoringly.
