  • Place ground beef in a skillet. Brown it and drain off the fat. Add the water, olives (optional), and taco seasoning mix and cook on low until the water is gone.
  • Meanwhile, open the dinner rolls and press into the bottom of a standard glass pie plate. This is the crust of your pie. Crush about a cup of Fritos and spread evenly over bottom of pie crust.
  • Now the ground beef should be done so spread the meat mixture evenly over the crust. Spread the sour cream evenly over the entire top of the meat. Sprinkle the cheese evenly over the sour cream. Crush enough of the remaining Fritos to cover the top entirely.
  • Bake at 350 degrees F for about 15 minutes or until the crust is golden brown and the cheese has melted. Serve with shredded lettuce and the tomatoes.

Special Equipment Needed

I have had this recipe for over 23 years and I don't remember where I got it. I have lightened it with the reduced fat rolls, cheeses, and sour cream because the Fritos are so high in calories. I've even started making it with lean ground sirloin since it has become readily available. If you like things a little hotter, the Monterrey Jack cheese with Jalapenos is a good substitute. This makes an entire meal with the lettuce and tomatoes. I frequently substitute chicken breasts that I have cooked ahead of time and shredded or with chicken breast meat from cans (like Swanson). Just follow the same directions.
