  • Bring a large pot of salted water to a boil. Add asparagus and cook 3-4 minutes. Drain and set aside.
  • In skillet, lightly toast pine nuts over medium high heat (about 5 minutes) and set aside.
  • In a large bowl, whisk together lime juice, oil, and salt until smooth. Add asparagus and toss well. Top with goat cheese and pine nuts. Serve warm or cold.
