  • Bake potatoes, then peel off skins and coarsly mash. In a large saucepan, over medium heat, melt butter. Stir in flour and cook about 1 minute, stirring constantly. Whisk in milk, a little at a time, stirring constantly until thickened.
  • Stir in potatoes, salt, pepper, nutmeg, bacon bits, onion and cheese. Cook until thoroughly heated. Stir in chicken broth. Stir in sour cream and heat through.
  • To serve, garnish either by reserving some of the bacon bits, cheese, and onions and sprinkling these over, or simply sprinkle over some paprika. If too thick, stir in additional chicken broth until a consistency that you prefer.

Substitutions: Try substituting cooked ham, cubed, for the bacon bits.
