  • *** How many potatoes do you add in the beginning?
  • In skillet on med heat, add oil and bacon. When one piece of potato begins to cook add rest of potatoes. Cook on med heat and cover skillet for 15 - 20 minutes (stir occasionally). Remove lid and fry for a couple min. Oil should be absorbed, but if not, drain, and leave approx 1/4 cup oil in bottom.
  • Beat eggs and 2 Tbsp. of water till well mixed and fluffy. Slowly pour over potatoes, add diced garlic. As egg is jelling, gently lift edges of "pie" the way around. Cut an X and turn over each quarter, cook approx 3 min.
  • Turn off heat and remove to cool burner, add any optional items, and sprinkle cheese over entire "pie". Re-cover for 8 minutes.

I started with a higher fat version of this many years ago. Feeding a herd of hungry growing children. This is a delicious way to start or end the day. It is good re-heated and very filling. I love to add fresh tomatoes then I have all of the food groups! My stomach is growling as I write this to you. It is GOOD! When we have more guests, I increase the size of the skillet, and the ingredients.
