  • Mix graham cracker crumbs with sugar, and mix melted butter in the mixture. Press the mixture into a 9 x 13 inch pan firmly.
  • Dissolve the lemon Jell-O with the boiling water, cool slightly, but do not let it set.
  • Blend the cottage cheese in a blender until smooth. Add the lemon Jell-O mixture and blend again, until blended. Pour cheese mixture into a large bowl. Fold the Cool Whip into the cheese mixture.
  • Spoon the cheese mixture into the pan with the graham crackers. Spoon the fruit filling over that. It does set up quick.

Notes

This is a very quick and easy recipe. Very good for someone watching their calories, you can make it as low cal as you like, by omitting the sugar in the crust, using sugar free Jell-O and lite Cool Whip, and low fat cottage cheese. Also by using fresh fruit for the topping or omitting the topping all together.
