  • Preheat oven to 350 degrees F. Grease a 9- to 10-inch springform or a 9-inch round cake pan.
  • Cream butter and Splenda well. Add eggs, one at a time, beating well after each addition.
  • Mix almond flour with baking powder and add wet mixture a little at a time while beating. Add lemon and vanilla extracts, mix.
  • Pour into pan and bake for 50-55 minutes.

One tip: Use Bob's Red Mill SUPER-FINE Almond flour! Also, use a hand mixer and follow the directions (adding one egg at a time). It was truly delicious!!

Rated 5 out of 5 by from Delicious! Perfect low carb cake! I've made it a few times (add 1/2 c of sour cream for moisture & pull a few min early). I slice it in half to make it a layered cake since it is a denser cake. I make a cream cheese almond flavored frosting using low cal sweetener and make whip cream also with sweetener then I spread 1/2 frosting & half whip in the middle add 2 tbsp of sugar free raspberry jelly. Add top layer and frost with remaining frosting. Simply incredible!
