  • Preheat oven to 350 degrees F. Grease a 9- to 10-inch springform or a 9-inch round cake pan.
  • Cream butter and Splenda well. Add eggs, one at a time, beating well after each addition.
  • Mix almond flour with baking powder and add wet mixture a little at a time while beating. Add lemon and vanilla extracts, mix.
  • Pour into pan and bake for 50-55 minutes.

Rated 5 out of 5 by from This recipe is excellent! I never leave reviews, but I had to. I was in search of a tasty low carb dessert and this is it!! One tip: Use Bob's Red Mill SUPER-FINE Almond flour! Also, use a hand mixer and follow the directions (adding one egg at a time). It was truly delicious!!
