  • 1. Spray a 9x11 pan with non-stick cooking spray.
  • 2. Spread some spaghetti sauce in the bottom of the pan. Layer eggplant slices on top of sauce. Sprinkle parmesan cheese on top of eggplant.
  • 3. Repeat layering until all of the eggplant is used, sprinkling the parmesan cheese over the eggplant with each layer. Use more sauce between layers 2 & 3(usually you'll have 3-4 layers total.)
  • 4. Cover last layer with sauce. Sprinkle with parmesan cheese.
  • 5. Place slices of mozzarella cheese over the entire top using all the mozzarella.
  • 6. Bake at 375 degrees F for 40 minutes.
