  • In medium skillet add vegetable broth, onion, garlic and celery and bring to a boil. Reduce heat to low and simmer until vegetables are tender, about 10 minutes.
  • Add milk, corn, artichokes and roasted red peppers. Cook 3 to 5 minutes until heated through. Turn off heat and cool 5 minutes, and then puree half of the soup in a blender or processor on low. Return to pan.
  • Add chili paste and warm for 5 minutes until soup reaches desired heat. If you prefer, add salt and/or fresh black pepper to taste.


This is a really surprising and delicious blend of flavors and pureeing half of the soup gives it a wonderful texture. It is a warming and delicious, healthy soup!
