  • Step 1: Preheat oven to 350 degrees F.
  • Step 2: Spray 12 cup muffin pan with non fat/calorie cooking spray.
  • Step 3: In a bowl combine bananas, egg whites, sugar, and extracts.
  • Step 4: With a mixer, blend until smooth and slightly fluffy.
  • Step 5: Add yogurt to banana mixture and mix by hand until incorporated.
  • Step 6: In a separate bowl combine flour, baking powder, baking soda, and salt.
  • Step 7: Add flour mixture to banana/yogurt mixture, and mix until just combined.
  • Step 8: Spoon into pre-sprayed muffin pan.
  • Step 9: Bake for 15-20 minutes, or until knife inserted in the center comes out clean.
  • Step 10: Remove from pan and enjoy!


A wonderful treat without the guilt!!! I loooove these muffins with sugarless strawberry jelly. This recipe would also make a nice banana bread.
