  • Wash turkey inside and out; removing the sacks containing the giblets from each cavity. Place the turkey in a roaster; add coarsely chopped onions and celery in the large cavity. Pour 1 to 1 1/2 inches of water into the roaster, and then sprinkle about 2 cups of chopped onions and celery around the turkey.
  • Cover the turkey loosely with aluminum foil and roast in a preheated 325 degree oven until a meat thermometer indicates the internal temp is 180 degrees in the thigh and 170 degrees in the breast.
  • Let turkey cook, then slice. Arrange the meat in a large baking pan. Skim the fat from the pan juices, and then pour enough of the juices over the meat to cover. Reserve the remaining juices, cooked onions and celery to use in the dressing.
  • Cover the turkey with roil and refrigerate. The next day, reheat the turkey, loosely covered with foil, in a 275 degree oven for 45 minutes.
