  • Cook rice according to direction; while in a medium sauce pan, heat olive oil and minced garlic. Add ground beef, brown, and drain. Combine 1 can of diced seasoned tomatoes, cooked rice, and ground beef in a bowl. Add sliced mushrooms (optional). Set aside
  • Clean and prep bell peppers by cutting just the tops off and removing seeds and ribs. Fill each bell pepper with meat mixture. Replace tops.
  • Place filled bell peppers into a large sauce pan. Pour 1 can of diced seasoned tomatoes, and tomato sauce. Make sure bell peppers are covered to the rim. Simmer for 20 minutes. Serve in a bowl with sauce.


This is an old recipe my mother gave me. I am a vegetarian so I use a ground meatless substitute. I use 10 minute boil-in-bag rice.
