  • Cut the chicken breasts into approximately 1 inch cubes. Place olive oil into pan and beat, add chicken, salt & pepper, and cook on medium to low heat until nicely browned on both sides, about 15 minutes.
  • Pour red and green salsas over chicken and stir until chicken in nicely coated. Add 4 ounces of water and simmer another 10 minutes on low heat, stirring mixture occasionally. Mix together remaining 8 ounces of water and 1/4 cup flour and mix well with fork until lumps are out. Slowly add flour and water mixture to chicken mixture, stirring in with a whisk or fork. This makes a really nice spicy chicken gravy. If it's too thick to your liking, add some water and stir well. If too thin, add some additional flour and water paste.
  • Optional: If you prefer to add some vegetables to your chicken mixture, now is the time! Stir them in and simmer on low, stirring frequently. While chicken mixture is simmering, prepare Minute Rice according to directions. Serve chicken over a bed of white fluffy Minute Rice for a wonderfully spicy chicken entree.


My family loved it and didn't even realize there was salsa in it! Chicken breast can be rather bland and this recipe gives it a rich, spicy flavor. I prefer to use Taco Bell Home Originals Thick and Chunky Salsa. I don't recommend using any other brand of rice except Minute Rice.
