  • Place chicken breasts on grill or in the broiler, and cook thoroughly. While chicken is cooking, clean and chop romaine lettuce. On two plates, place 1/2 romaine and 1/4 package of spring mix onto each plate.
  • Dressing:
  • Open can of oranges and drain the juice into small bowl, then add oranges to plates with lettuce. In same small bowl add rice vinegar and sesame oil to drained juice and mix well. Set plates and dressing mix aside.
  • When chicken is thoroughly cooked, let cool for a few minutes. Then chop chicken into strips and place on top of lettuce and oranges. Stir dressing again until blended well then pour half over each plate. Sprinkle with sesame seeds and serve.

Notes

The cooler the chicken the better. I like to place all ingredients into a bowl with a lid and gently shake to mix. Add more vinegar for a tart flavor, and less for mild flavor.
