  • Dice up mango. Chop red pepper, onion, and jalapeno. Mix into a medium size bowl.
  • Mix vinegar, sugar, salt and pepper to taste and add to the bowl.
  • Stir and chill before serving.


I triple the vinegar and the sugar for this recipe. I like a lot of juice. However when I serve it, I do drain some of the excess off.

    This salsa was a big hit! Although next time I wouldn't use as much purple onion. It was too strong, over powered everything else to me. l also I wouldn't use all the lime juice at once unless you were planning on eating it all immediately.

    My mom and I had to sample this salsa before putting it in the fridge. Yummy. I'm sure it'll be even better chilled.
