  • 1. Melt the chocolate with the butter and 3 tablespoons of the sugar over low heat.
  • 2. Place the egg yolks in the bowl of an electric mixer. Add the chocolate mixture gradually and beat on high speed for 10 minutes.
  • 3. Beat the egg whites until stiff and add the remaining tablespoon of sugar. Add to the egg yolk mixture. Add the Grand Marnier and beat on high speed another 10 minutes. Pour the mixture into a buttered 2-quart souffle dish. Refrigerate 12 hours.
  • 4. Unmold 2 hours before serving by dipping the bottom and sides of the souffle dish in hot water. Run a sharp knife around the sides of the mold to loosen and invert the mold onto a serving plate. Smooth the surface of the chocolate mold with a knife and cover with shaved chocolate and/or crushed macaroons. Refrigerate again until serving time.
