  • 1. Fill a large pot with water and bring to a boil. Add cubed potatoes to boiling water, cooking until tender (about 15 minutes). Drain all the water from potatoes.
  • 2. Mix onion, butter, sour cream, nutmeg, pepper, and salt in with the potatoes. Mix together until creamy. Add in egg, blending smooth.
  • 3. Preheat oven to 450 degrees F.
  • 4. Grease a cookie sheet that has a tall rim. Spoon potato mixture into a large zip-top bag (or pastry bag), with a large star piping tip. Pipe 16 mounds, 3 inches high, and about 2 1/2 inches wide at the bottom, onto the cookie sheet. Make them smaller at the top to look like small trees. Sprinkle them with the parmesan cheese.
  • 5. Bake until trees start to lightly brown (just around 12-15 minutes).
  • 6. Take potatoes off of cookie sheet with a large spatula. Take the parsley and red bell peppers and speckle the trees all over. Stick one yellow bell pepper star on top of each potato tree. Serve warm. (2 per serving)

I usually substitute the sour cream with creamy ranch dip. These are perfect at Christmas dinner! My friends and family just eat these up! Everyone loves them.
