  • Put flour, soda, salt, and cocoa in large mixing bowl. Set aside.
  • Beat mayo, sugar, water and vanilla until creamy. Add dry ingredients slowly and beat well.
  • Preheat oven to 350 degrees F. Prepare either 2 - 10" round pans, or put into oblong pan. Cook 30 to 40 minutes or until toothpick comes out clean.
  • Icing:
  • Mix butter, cocoa, powdered sugar, vanilla, and salt together with some milk. Stir to get all lumps out. Add more milk if too thick.

Notes

I grew up on this cake! My brother's favorite. He called it "Chocolate inside, chocolate outside" cake. Any frosting can be used though. For people who don't do mayo, you'll never know the difference!!

    My mother made a mayonnaise chocolate cake with chocolate frosting when I was a teen, now 56 yrs. old. When ever I eat cake, box mixes, store bought, or homemade cakes you always need something to drink with them. Their usually hard to swallow. But when I first tasted it, I didn't need anything to drink with it. Putting mayonnaise in with the batter makes a very moist cake that you can swallow without trying to force it down by swallowing & swallowing. I told my mother that was the only cake to ever make again. And just put different type of frostings, on it, vanilla, cream cheese, or what ever you think you might like on yours.

    I grew up on this recipe too!!! it is easy, fast, great tasting and cheap to make!!! As a kid, when I would tell people it was made with mayonnaise, they would turn up their noses until they tried it!!! It brings back many memories and it is wonderful to see that others were able to enjoy this recipe as well growing up!!

    This cake is extremely moist and chocolately. I made this cake for a 4-H Fair one year and won First Place & won for the Best Cake!
