  • Tear off 6 sheets of aluminum foil (approx. 10" square). Brush each sheet of foil with oil and set aside.
  • Cut raw vegetables into chunks or slices and divide among the pieces of foil in the center. Season with salt and pepper.
  • Place chicken on top of vegetables allowing the majority of the vegetables to be on each side of the chicken. Cut slits along the breast and sprinkle each with mozzarella cheese. Sprinkle basil on top of the cheese.
  • Roll up edges of foil together and tuck in the ends forming a pocket. Place on cookie sheet and cook at 400 degrees for 30 minutes.

Special Equipment Needed


Place vegetables and chicken on shiny side of foil with dull side facing outward. This will help the heat to be absorbed and will keep the heat from being reflected away. This recipe is easy and very colorful when served.
