  • Prepare couscous as directed on package.
  • Mix olive oil and lime juice in large bowl. Add couscous, chick peas, vegetables, and remaining ingredients; mix well. Add salt and pepper to taste.
  • Cover and refrigerate for two hours to allow flavors to blend.

Notes

Both olives and feta cheese can be very salty depending on what type you use, so add salt after ingredients are mixed. Also, great as a main dish with grilled chicken on top.
