  • Preheat oven to 400 degrees F. Spread hummus on pita bread. Drizzle olive oil. Add optional chicken, if using.
  • Sprinkle cheeses over top of hummus/olive oil. Sprinkle basil over top and add sliced tomato to cover. Add salt and pepper to taste preferences.
  • Bake for 10 minutes or until pita is slightly crispy and toppings are hot.

Special Equipment Needed


This is a favorite in my house. We use it as a main course for dinner and we will also make multiple and cut into quarters for an easy party dish. By using whole wheat pita, fresh vegetables and herbs, and reduced fat cheeses, this becomes a very nutritional meal.
