  • Prepare the rice to the bag's instructions. While the rice is cooking, put 2 Tbsp. of the EVOO into a frying pan with some salt & pepper. Slice or chop the onion and place into the pan to saute. Stir occasionally so they do not burn. When the onions are caramelized add the sugar. Move the onions into a large bowl.
  • Put the last 2 Tbsp. of EVOO into the pan, spread it around and place the beef into the pan. Stir the beef constantly so that it will not burn. Once the beef is crumbled and cooked through, drain the grease if any, and place the beef into the bowl with the onions.
  • When the rice is finished, fluff it up and place into the bowl with the onions and beef. Open the can of corn and drain. Place into the bowl. The heat of the rice and beef will heat up the corn or you can heat it up in the microwave for 1 minute. When everything is inside the bowl, mix it around evenly. Salt & pepper to taste.

This recipe was a creation of my 4 year old daughter. She asked for all of her favorites to be mixed together and since then we have had this every week on Wednesdays. We hope that you like this simple recipe that came out of a 4 year old's head, we do. To make it look a little better, keep the ingredients separate and when you plate them up layer it in any order. If you feel like something different, just add 2 cans of condensed Cream of Mushroom soup. When you add the soup, add it with all of the ingredients into a large pot and heat it up.
