  • Preheat oven to 350°F. In large skillet, brown ground beef and drain. Add tomatoes, salsa, broth and corn mixture. Cook over medium heat 10 minutes.
  • Layer half the chips in the bottom of a 9 x 13" baking dish. Spoon half the beef mixture over the chips. Sprinkle with half the cheese. Repeat layer except for cheese.
  • Bake for 20 minutes. Remove from oven and sprinkle remaining cheese on top. Bake an additional 10 minutes or until cheese is melted.

My husband is a shift worker and when he works the 4 - 12 shift, I need to make dinners that will travel and re-heat well. I'd been planning enchiladas but I happened to have all of these ingredients on hand and decided to try this combination. He loved it and so did my daughter, who is always looking for new and easy and basically healthy recipes for her family. (Shredded or diced chicken could be substituted for the beef as well as low-fat cheese.)
