  • Brown turkey with sausage in the bottom of a pot large enough to hold all ingredients. When almost cooked add drained corn. Stir together until thoroughly cooked. Add Taco Seasoning and stir well. Add rice and water and bring to a boil. Stir at boiling for 2 minutes. Reduce heat, add pinto beans.
  • Cover and cook on low for 25-30 minutes. Serve in bowls and sprinkle with cheese. Serve chips on the side.

  • Preheat oven to 350°F. Cut tortillas into whatever shapes you prefer. I have used cookie cutters for silly shapes and such. Lay on a baking sheet and lightly coat with olive oil. Bake until lightly browned and turn over. Repeat. Remove from oven and sprinkle seasoning on them. Let cool.

Special Equipment Needed


One of my favorite kitchen utensils are my oil sprayers. This allows me to create my own oils such as garlic olive oil, or hot pepper oil for cooking and spray it onto a pan or my food consistently and I use much less. I spray my chips with a garlic olive oil.
