  • Chicken Prep:
  • Heat in your skillet your choice of oil to brown your chicken breast; you can season to taste if you like. Once chicken is cooked, if there is excess oil drain excess. Add pan back to heat. Open 2 packs of taco seasoning and add to chicken while in pan. Add 1 cup of water and stir. Let the chicken simmer in the taco seasoning for about 5-10 minutes. Remove from heat - do not drain.
  • Salad Prep:
  • Take your salad mix pour it in a strainer, rinse off. Pour salad mix in a large bowl, and then top with sliced cucumbers. Open your cans of tomatoes, drain off excess juice, and pour both cans over salad. Then add can of beans, cut up your green onion add to salad.
  • Using a slotted spoon - spoon out the chicken over the salad mix in the bowl. Once chicken and all items are spread evenly in the bowl, drizzle a little of the taco seasoning juice over the salad. Then top with cheese and croutons, finish by adding the rest of the taco seasoning juice.


You will not need salad dressing because all your flavors come together and with the juice from the taco seasoning it makes its own dressing! It's a fun, healthy and tasty way to get all in one meal! My six year old loved it!
