  • Boil 4 cups of water add rice; cover, remove from heat and let stand until water evaporates (approx. 5 minutes).
  • Cook and stir onion, carrot and garlic in hot oil and butter in a 12" skillet over medium high heat, stirring frequently, until vegetables are tender, but not brown. (Approx. 5 minutes).
  • Stir in flaked crabmeat, cilantro, parsley and lemon juice. Cook 4 minutes, stirring constantly.
  • Stir in 1 cup medium salsa, 1 can (4.5 ounces) of green chilies and salt. Cook until salsa and chilies are hot. Pour sauce over rice in large bowl ; toss gently to coat. Garnish with Creole spice to taste
