  • Boil then peel the potatoes, and cube into a bowl. Boil chicken breasts, cool and cube into chunks. Cut cabbages into small pieces- red cabbage is for color. Chop green onion. Cut jalapeno pepper into very small pieces and throw seeds away. Cut onion into small pieces. Cut red pepper into small pieces.
  • Let chicken and potatoes cool them stir all ingredients in with mayonnaise and garlic salt and pepper to taste.
  • Chill for about 1 hour.

Notes

If interested in low cal you can substitute the potatoes with cauliflower - same prep instructions. Enjoy!
