  • Prepare chicken, or chop up leftover chicken in advance. Prepare rice as directed on the box. Wash and hollow out green peppers by cutting off the stem tops.
  • Once rice is completely cooked, add tomatoes, chicken, sour cream, and optional items to rice mixture. (Note: some rice recipes call for tomatoes to be added during cooking)
  • Stuff the green peppers with the rice mixture and set them in a glass casserole dish, or on a baking sheet.
  • Bake at 350°F for 1-1/2 to 1-3/4 hours.


This recipe is a wonderful way to use leftover rice and chicken. All items can be prepared ahead of time.
