  • Preheat oven to 350 degrees, and prepare two cookie sheets (either line them with a silpat, or grease them) *all ingredients should be at room temperature before beginning!!*
  • Cream together shortening, butter and sugar. The consistency should change, and the color should turn a lighter shade (about 3-5 minutes of beating). Add salt, baking soda, and egg. Beat well to incorporate (about another minute or 2 of beating) Add cocoa powder and beat at a low speed at first, then at medium to fully incorporate. Add flour, and take same steps as with cocoa powder.
  • Using two tablespoons, shape about a tablespoon of dough into a canelle and drop onto the cookie sheet. Sprinkle with cinnamon sugar and bake for 14 minutes. Allow to cool slightly before chowing down. These cookies retain a wonderful texture, even after cooled, but there are few things better than a cookie warm out of the oven and a cold glass of milk.
