Minestrone Chili and Zesty Oyster Crackers

  • Brown meat in skillet and drain. Do not add any seasoning to meat while it is cooking. Transfer the drained meat into a large stock pot or crock-pot (even better). Add minestrone soup, Ro*Tel, and all seasonings.
  • Allow to simmer for 30-45 minutes for all ingredients to meld together.
  • Zesty Oyster Crackers: Place crackers in large plastic bowl. Add oil, dry Kraft Ranch dressing mix, and dill weed. Toss all together until crackers are completely coated. Spread on cookie sheet in one layer. Bake in oven 200-250 degrees for 15 minutes until crackers are lightly toasted. Remove from cookie sheet and drain on paper towels and store in Ziploc bags or favorite container.


Servings suggestions are toppings like: grated cheddar cheese, picante sauce, black olives, green onions and of course the Zesty Oyster Crackers are a must have. I also serve giant cinnamon rolls for dessert with this meal. It makes the heat and the sweet come together nicely. This is a comfort food for cold days and cuddly nights with your family and friends. I serve this dish at my Super Bowl Party and it is always a hit. The crackers are so delicious no one can eat just one. Be careful these crackers can be addictive. I have a 2 yr old granddaughter and she knows the smell when she enters the house she runs straight to the kitchen for her own bowl. She loves them. I make a supply for her just to take home. Enjoy!
