  • Beat cream cheese, sugar, eggs, juice and vanilla until fluffy.
  • In bottom of paper muffin, place 1 Nilla wafer, and then fill 2/3 full with cream cheese filling.
  • Bake 15-20 minutes at 350 degrees F. Cool, then top with your choice of pie filling flavor. Refrigerate till serving time.


This is not an original recipe but one that I make every Christmas and include with my cookie gifts to family and friends. I will use decorator papers, either the silver ones or Christmas theme ones and the cherry cheesecakes look very Christmassy and taste wonderful. Just a little cheesecake snack, instead of a big piece. Enjoy everyone.

    I wasn't sure exactly how long to beat till fluffy. Mine never really looked "fluffy". Taste was good.
