  • Preheat the oven to 350 degrees F. Line muffin pan with 12 muffin cups. Place 1 wafer in each muffin cup.
  • Place the cream cheese in medium sized bowl. Mix in the sugar, vanilla, and one of the eggs, beat well. Then add the remaining egg, beating well. Pour each muffin cup about 2/3's full.
  • Bake for about 8-10 min, until tops are light brown. Remove from oven, cool. As the muffin cools, the tops will fall, making a indention. Fill each indention with cherry pie filling. ENJOY!

    I have been making this recipe for years. Everyone always asks for the recipe. I have also used ginger snaps for the crust and blueberry pie filling for the tops. This recipe is so easy and elegant at the same time.
