  • Preheat oven to 400 degrees F. Generously spray a nonstick muffin pan with cooking spray. Gently mix turkey, zucchini, carrot, onion, garlic, bell pepper, couscous, egg, Worcestershire, mustard, pepper, salt in a large bowl, preferably with your hands.
  • Divide the mixture between the 12 muffin cups. Bake for about 20 minutes.
  • Add 1/2 Tbsp. barbecue sauce per muffin and cook for an additional 5 minutes. Serve 3 muffins per person.


Be sure to serve these healthy mini meatloaves with a whole grain and a nice salad or other vegetables of your liking. You can also add cheese to this recipe.
