  • Preheat oven to 400 degrees F. Grease muffin tin. Beat egg with a fork. Stir in milk and oil. Stir in flour, baking powder, sugar, salt and pudding mix, just until moist. Batter will be lumpy.
  • Bake for 20-25 minutes.

Notes

The origin of this recipe came from a cafe I frequent. They use an industrial muffin mix to make these muffins. I thought I could experiment to see if I could come up with something comparable. This recipe is the result. I hope you enjoy the beautiful green color and the sweet, moist delicious flavor as much as I do.

    I love the pistachio muffins at Tops Grocery store and have been trying to replicate it for months. I thought this had the best hope but I was disappointed. There was no pistachio flavor to this muffin. So I added a second package of pudding and chopped up pistachios and added a little more milk. Still no pistachio flavor. I then decided to make a glaze for the muffins, dipped them in the almond extract flavored glaze and sprinkled chopped pistachios on it. They were ok, but I won't do this recipe again. the texture was nice and the color was a pale green.

    I Loved this recipe! I have to watch my fat intake, so I made some substitutions, using 4 egg whites for the eggs and using 1/8 cup each of applesauce and no fat sour cream for the oil and it came out wonderful. Thanks for the recipe!
