  • Preheat oven to 350 degrees F. Coat pans with non stick spray. Combine sugar, oil and eggs; mix well. Add in pumpkin, salt, baking soda, cinnamon & nutmeg, mix well. Add flour and mix well.
  • Fill pans about 1/2 full.
  • For loaf pans: bake at 350 degrees F for 35-40 minutes. For mini loaf pans, check for doneness with a toothpick starting at 25 minutes.
  • For muffins: bake at 350 degrees F for 25-30 minutes depending on size of muffins.

Special Equipment Needed


This is a moist bread and can be served with a dusting of powder sugar. The mini loaves are great for holiday gifts. Any pan can be used with this recipe even mini Bundt pans. Just check center with toothpick, when it comes out clean, it's done.
