  • Preheat oven to 350°F. Sift together flour, baking powder, salt and cocoa. Cream oil and 1 1/2 cups sugar. Add eggs one at a time. Beat well after each one. Add red coloring (leave 4-5 drops in bottle). Mix well. Combine buttermilk and baking soda. Mix well. Add to oil/sugar mix alternately with dry ingredients. Add vinegar and vanilla. Mix. Put into two 9" pans.
  • Bake for 25-30 minutes. Combine milk and rest of sugar in pan. Bring to boil. Spoon evenly on each layer before frosting.
  • Cream Cheese Coconut Frosting
  • Combine cream cheese, butter and vanilla. Beat till blended and smooth. Gradually add sugar while beating. Add 3/4 cup coconut, mix well. Spread between layers and over top. Combine rest of coconut with red coloring, mix well. Sprinkle over cake.
