  • Butter the cake pan and then dust with sugar. Cream butter and sugar together. Add eggs to the mixture. Stir in flour, baking soda and salt, alternating with buttermilk. Add in the vanilla and stir until well blended. Fold in the mashed bananas and pecans: Never use a mixer at this point. *This recipe can be prepared by hand without a mixer.
  • Baking times:
  • 9 x 13 pan for 25-30 minutes
  • Tubular pan-45 minutes
  • 2 Loaf pans-50 minutes
  • Glaze:
  • Cool the cake for 10 minutes. Poke holes in the cake with a fork. Melt the butter, add the milk to warm the stir in the powered sugar and vanilla. You want this topping thin and watery so you can pour the glaze over the top of the warm cake. You may want to add more powered sugar a little at a time until you like the consistency.
  • Icing Alternative:
  • Cool the cake. Mix the ingredients together and spread over the top of the cake. Refrigerate.

Special Equipment Needed


This cake can be served plain, glazed or iced. It is your choice. Blueberries: Wash, drain, and dredge in 1/3 cup flour. Stir blueberries into the batter.
