It is very simple but has pleased all of the company. Just serve and dip the tortilla chips into the cheese and chili mix.

I substituted 1 cup of 2% greek yogurt for the sour cream and it didn't seem to have any negative impact while making them lower in fat! Will definitely be adding these to the list of my favorite fall treats.

I made it to the specifications and the only thing I noticed is that they frosting was really rich so you don't need a lot on each one. Because of that, I ended up with a lot of extra frosting. I froze it and I'll use it next time I make this or with pumpkin bread.

Icing was a little too rich for my taste, and was hard to make with a hand-mixer (powdered sugar everywhere) but I assume it would be easier with a standing one.

I printed out recipes for everyone before they left. My daughter asked if I would make these for her birthday rather then a traditional cake.

Rated 5 out of 5 by from OMG - these are divine! OMG - these are divine!! I didn't have spice cake mix so i used yellow cake mix and added 1 t cinnamon 1/4t. allspice and 1/4 t. cloves - these will definetley be a new fall favorite!! Frosting was great i'm sure i'll use it on other things too

Rated 5 out of 5 by from I made these for a work event. I made these for a work event. They were a huge hit. The cake is moist and delicious. The icing is excellent. I only used 1 tsp cinnamon instead of 1 1/2 tsp, but otherwise followed recipe exactly. I will definitely be making these again.

Rated 3 out of 5 by from This was a very easy recipe. This was a very easy recipe. I turned it into a cake instead of cupcakes. Everyone seemed to enjoy it, but the icing is way too sweet. I wouldn't add that much sugar next time, it doesn't need it. But it did taste like carrot cake!

I cheated and made this as a cake instead of taking time to ice each cupcake, so I baked it in a 9x13 pan and it turned out great and the house smelled amazing. I've had requests for the recipe and everyone that tried it wanted more!
